Catch of the day swimming in veggies

Today I will post in English for all my foreign friends/readers.
I bought some very fresh cod this morning to prepare a Maroccan style fish dish.
You need
700 grams of cod filet, skin removed, divided in 8 pieces
1/2 of a big carrot, peeled and diced in miniscule cubes
1 pointed sweet pepper diced in miniscule cubes
2 stalks of celery, shaved with a peeler and diced in miniscule cubes
2 garlic toes, peeled and finely minced 
15 mangetouts very thinly sliced 
1/2 ts Ras al Hanout 
1/2 ts curcuma
quite a pinch of crumbled saffron
2 bay leaves
1/3 bunch of cilantro fineley chopped including the thinner parts of the stems
1 Maroccan lemon, pitted and finely chopped
150 ml dry white wine
1/2 ts salt
several twists of freshly ground pepper

HowTo
Heat some oliveoil in a pan and add pepper, carrot and celery. Stir to fry the veggies for some minutes and add the garlic. Bake some more then add Ras al Hanout,, curcuma, bay leaves, salt, pepper, saffron and the lemon. Stir to mix and add the wine. Cover the pan, turn the heat low and let the veggies simmer for some time till the carrotcubes are al dente. This is the moment you add the mangetout and the cilantro. Turn of the heat. Give it a stir and adjust to your liking. Maybe add some wine if the veggies are rather dry. They should be smooth not dry or liquid.
Put the pieces of cod in a nice earthenware casserole and spoon the veggiesauce on top of the cod so they are covered.
Put the casseole in a preheated oven at 1600C for some 20 minutus or till the fish is cooked. 

Serve with a green salad and add some smoked pepper to your dressing. Use French bread to scoop up the juices.

PS. Because you can't see the fish you may name it drowned fish in veggies as well :-)
